After combining with aromatics such as celery, onion, garlic, carrots and bay leaf, and cooking for an upwards of 36 hours, the solids are strained and the remaining broth is utilized. This broth, infused with all of the collagen, gelatin, minerals and amino acids (protein) from the bones and vegetables, is what we often refer to as “liquid gold.”
